Vanilla Protein Cake or Cupcake


Vanilla Sugar Cookie makes a wonderful cake (or cupcake!) mix base that is super versatile and satisfying! If you're craving something sweet and has that 'carby' texture (without the carbs!) - this recipe s a lifesaver!

Vanilla Protein Cake and Cupcake

  • Prep Time = 5 mins
  • Cook Time = 18-22 mins 
  • Makes 1 mini cake loaf (1 big serving!) or 5 medium-sized cupcakes

INGREDIENTS

  • 2 scoops (34g) Vanilla Sugar Cookie Fit Whip
  • 1/2 tsp Baking Powder
  • Dash of salt
  • Optional: Flour: Use 1 Tbsp Almond Flour OR 1 Tbsp Coconut Flour OR 1.5 Tbsp Oat Flour OR 1.5 Tbsp All Purpose Flour 
    Flour will give cake a more firm/dense texture
  • 3/8 Cup (3oz) Unsweetened nut milk (or milk of your choice!)

OPTIONAL

Toppings/inclusions of your choice:
We love mixing PB2 into Fat Free Whipped Cream or Greek Yogurt, but you may also use Chocolate chips, Cocoa nibs, Sprinkles, Whipped Topping, etc.

    INSTRUCTIONS

    • Preheat oven to 350'F. Spray a small loaf pan (5-6 inches x 3 inches) or cupcake tin with nonstick spray. 
    • In a small bowl, mix dry ingredients together. With a small whisk or fork, mix in milk until ingredients are just combined.
    • Pour batter into small loaf pan, or between 5 cupcake molds.
    • Cook for 18-22 minutes, or until cake/cupcakes rise and are golden brown along the edges.  
    • Top with your favorite healthy toppings, or eat alone!

    • Calories = 175

    • Calories = 165

    • Calories = 191
    • Fat = 2.8g (0.5g Saturated Fat)
    • Carbs = 19.4g (net carbs = 9.1g)
