Protein Samoa Girl Scout Cookies

When Girl Scout Cookies are calling your name from the cupboard (or freezer!) - here is your secret weapon -  Protein Samoa Girl Scout Cookies! This fun, tasty recipe was created by an inspiring woman in our community, Jessica @mrs_tring, and was a winner of our March 2020 Creativity Giveaway! 


Protein Samoa Girl Scout Cookies

  • Prep Time = 10 mins
  • Cook Time = 20 mins
  • Makes 12 Cookies 

INGREDIENTS

  • 2 Scoops (38g) Chocolate Fit Whip 
  • 3/4 cup Coconut Flour
  • 2 Tbsp Cocoa Powder
  • 1/2 tsp Baking Powder
  • 1/4 cup Applesauce
  • 1 egg
  • 1/2 cup Unsweetened Almond or Coconut milk 
  • 2 Tbsp Butter, softened
  • 1 tbsp Greek yogurt
Topping: 
  • 1/2 cup Smucker's Sugar Free Caramel Sauce
  • 1/2 cup Shredded Unsweetened Coconut

INSTRUCTIONS

  • Preheat oven to 350'F. Spray a 12-count muffin tin with nonstick spray. 
  • In a medium sized bowl, mix together dry ingredients.
  • In a small bowl, mix together wet ingredients.
  • Mix wet ingredients into dry ingredients until combined.   
  • Divide batter evenly into 12 muffin tins; press to ensure cookies are flat. 
  • Bake for 10 minutes in preheated oven. 
  • When done cooking, allow cookies to cool and remove from tin. 
  • Mix together toppings ingredients and then divide evenly on top of each cookie. 
  • Enjoy!!!
