Macro-Friendly Fit Whip Zucchini Bread

Here's our macro-friendly version of our Fit Whip Zucchini bread. It's a higher protein, lower carb, lower fat version of your favorite! For just over 100 calories, you can enjoy this moist, spicy and cakey sweet bread while getting in a serving of vegetables! Grab those fresh zucchinis, your grater and Fit Whip to make this tasty, indulgent treat!

Macro-Friendly Fit Whip Zucchini Bread

  • Prep Time = 5-10 mins
  • Cook Time = 22-25 mins (depending on size of loaf pan)
  • Makes 1 mini cake loaf, with two servings

INGREDIENTS

Dry Ingredients:
  • 2 scoops Fit Whip - May use Chocolate (38g) or Vanilla Sugar Cookie* (34g) Flavor
  • 1/2 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • Dash of salt
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground nutmeg

Wet Ingredients:
  • 45g Liquid Egg Whites
  • 1 Tbsp Whipped Butter, softened to room temp 
  • 1/8 Cup Unsweetened nut milk (or milk of your choice) 
  • 2/3 Cup (85g) Freshly grated zucchini (about 1 small zucchini) 

OPTIONAL TOPPING

  • 1/2 Tbsp Mini Chocolate chips - place on top before baking   

INSTRUCTIONS

  • Preheat oven to 350'F. Spray a small loaf pan (5-6 in x 3 in) with nonstick spray 
  • In a small-to-medium bowl, mix dry ingredients together.
  • In a small bowl whisk together wet ingredients except for the zucchini.  
  • Add wet ingredients into dry ingredients and with a small whisk or fork, mix until ingredients are just combined. Fold in zucchini.
  • Pour batter into loaf pan. 
  • (Optional) Sprinkle mini chocolate chips on top of batter. 
  • Cook for 22-25 minutes, or until cake rises and a toothpick comes out clean from the center of the cake (we have found Chocolate flavor Fit Whip takes ~5 minutes longer to cook than Vanilla Sugar Cookie)
  • Remove from baking dish and cool on wire baking rack.  
  • Enjoy!

Using Vanilla Sugar Cookie Fit Whip:
Half Mini Loaf  (without toppings):
  • Calories = 118
  • Fat = 4.1g (Saturated Fat = 1.8g)
  • Carbs = 5.9g (net carbs = 5.8g)
  • Fiber = 3.1g
  • Protein = 13.5g
Full Mini Loaf (without toppings):
  • Calories = 237
  • Fat = 8.2g (Saturated Fat = 3.6g)
  • Carbs = 17.7g (net carbs = 11.6g)
  • Fiber = 6.1g
  • Protein = 27g
