Fit Whip Pumpkin Cake

Makes 1 big serving of cake
INGREDIENTS
- 2 scoops (38g) Chocolate Fit Whip
- 12g PB2 Powdered Peanut Butter (2 Tbsp)
- 1/2 tsp Baking Powder
- 1 packet Stevia (optional)
- 1/4 tsp Pumpkin Pie Spice
- Dash of salt
- 3/8 Cup Unsweetened Almondmilk (3oz) or other milk of your choice!
- 1/4 Cup Pumpkin Puree (57g or 2oz)
OPTIONAL - Toppings of your choice
- Fat-Free Whipped topping or Oikos Vanilla Triple Zero mixed with 1oz pumpkin puree and dask of pumpkin spice
- Sprinkles
- Graham Cracker Crumbs
INSTRUCTIONS
- Mix together Fit Wip, PB2, and baking powder, salt, stevia and pumpkin pie spice in a small-to-medium bowl.
- Mix milk pumpkin puree in a separate small bowl.
- Add milk-pumpkin mix into dry mix and stir until combined. Mixture will be thick.
- MICROWAVE INSTRUCTIONS:
- Pour into a microwaveable glass dish, 4-6 inches in length (tupperware works, too!).
- Microwave for 2-2.5 minutes.
- Let cool. Eat as is, or top with your favorite cake toppings!
- BAKING INSTRUCTIONS
- Preheat oven to 350'F
- Spray a 4 - 6" cake pan with non-stick spray.
- Pour batter into pan, spreading evenly across (helps to spray back of spatula with non-stick spray, as batter is sticky).
- Bake in center rack of oven for 15-17 minutes.
- Let cool. Eat as is, or top with your favorite cake toppings!
