Chocolate Chip Protein Cookies

When you are craving cookies, these are a great, healthier alternative!

To develop this recipe, we used the Chocolate Chip Cookies recipe from Hungry Girl's amazing cookbook, Simply 6, and improvised! If you haven't checked-out Hungry Girl yet - she has wonderful guilt-free recipes and other ideas for staying on track! (Not sponsored by HG - we just love her!)

 

Chocolate Chip Protein Cookies

  • Prep Time = 10 mins
  • Cook Time = 20 mins
  • Makes 5 Cookies 

INGREDIENTS

  • 1/3 Cup Unsweetened applesauce 
  • 2 Tbsp Whipped butter, room temperature
    (such as Land O Lakes, may also use I Can't Believe It's Not Butter!)
  • 1/2 tsp Vanilla extract 
  • 2 Scoops (34g) Vanilla Sugar Cookie Fit Whip
  • 1 Tbsp Coconut flour
  • (Optional) 1 Packets natural no-calorie sweetener (such as Stevia)
  • 1 Tbsp Chocolate chips (mini work best)

Optional Seasonings: 
  • 1/4 tsp cinnamon
  • 1/8 tsp salt

INSTRUCTIONS

  • Preheat oven to 350'F. Spray a baking sheet with nonstick spray. 
  • In a small-to-medium sized bowl, mix together unsweetened applesauce, whipped butter and vanilla extract with a small whisk or fork.
  • Add Fit Whip, coconut flour and optional sweetener. Mix until uniform - will look like cookie dough.  
  • Stir in 1/2 tablespoon of chocolate chips.
  • Evenly distribute the mixture into 5 mounds on the baking sheet, about 1.5 tablespoons each. Use the back of a spoon to spread and flatten into 2-inch circles.
  • Top with remaining chocolate chips, and lightly press to adhere.
  • Bake for 16-18 minutes.

  • Fat = 3.7g (Saturated Fat = 2.1g)
  • Carbs = 6.1g (net carbs = 4.3g)
  • Fiber = 1.8g
  • Protein = 4.2g
